The Famous Kenbrook Baked Oatmeal

This first post might as well be the classic!!

Here is the official recipe for the Baked Oatmeal dish that Kenbrook Bible Camp made famous!
The first is for serving 120 (if you need that kind of portions!) and the second is for a more modest 7-8 servings.

Enjoy this amazingly delicious breakfast classic! Perfect with brown sugar on top! But be warned: it expands in your stomach! Avoid strenuous physical activity for several hours after eating!!

The Famous Kenbrook Baked Oatmeal

7½ cup Vegetable Oil
15 cups Sugar
30 eggs
45 cups Oatmeal
½ cup + 2 Tbsp Baking Powder
3 Tablespoons Salt
15 cups Milk

Mix together Oil, Sugar and Eggs.
Add salt and baking powder.
Add Oatmeal.
Add Milk.
Pour into 2 – 18x26 pan Bake @ 350 for 35-60 min. (Till set in the middle)
(Time depends on dependability of oven and if pilot light stays on the whole time!)
Serves 120


½ cup oil
1 cup sugar
2 eggs
3 cups quick oats
2 tsp. baking powder
1 tsp salt
1 cup milk

Mix together Oil, Sugar and Eggs.
Add salt and baking powder.
Add Oatmeal.
Add Milk. Place in greased 9x13 pan.
Bake 350 for 30-40 min- till set and dry on edges
Serves 7-8

Peanut Butter Granola

Peanut Butter Granola

1cup butter
1cup peanut butter *
1 cup packed brown sugar
6 cups quick oatmeal

Melt peanut butter, butter and brown sugar in pan over low heat.
Put oats in large non-stick pan.
Pour melted mixture over and blend well
Bake at 350 for 10-20 min- stir occasionally.
Cool and store in air-tight container.

*Note -if you are using creamy peanut butter, use less butter.

Saturday Morning Coffee Cake

Attention Ex-Counselors! Relive that wonderful feeling of spending the last few hours with your campers with the traditional Saturday morning Coffee Cake!

2 cups flour
¾ cup sugar
2½ tsp Baking powder
½ tsp salt
¼ cup shortening
1 egg
1 cup milk

Sift flour, baking powder, sugar and salt
Add shortening
Beat egg and milk.
Add to dry ingredients.
Beat until mixed
Place in 9 inch square pan
Sprinkle with ¾ c brown sugar and 1tsp cinnamon
Bake at 375 for 25-30 min

Banana Cake

Banana Cake

2½ c. flour
1 ¼ tsp baking powder
1 tsp baking soda
½ tsp salt
1 2/3c. sugar
2/3 c. shortening
2/3 c. milk
1 ¼ c. mashed bananas
½ c. unbeaten eggs

Mix all ingredients.
Put in Greased 9x13 pan
Bake at 350 for 35 min.
Frost w/ Whipped topping
